Senior Lead, Heart of House
Born and raised in Panama City, Panama, Angel Blis Mendez carries a story shaped by discipline, humility, and belief. Long before he stepped into a professional kitchen, he was already building the mindset that would define his future. In school, he gravitated toward social studies and literature, subjects that sharpened both his curiosity and perspective. Along the way, teachers like Mr. Hall and Mr. Pue saw something in him early and helped him recognize his potential.
Angel’s hospitality journey began as a food runner in a local Mexican restaurant in Clayton County. That first opportunity opened the door to something much bigger. What started as work became a calling as he began to appreciate the craft, discipline, and purpose behind great hospitality. He learned that food carries more than flavor. It carries care, connection, pride, and the chance to create a moment somebody remembers.
When Angel joined Your 3rd Spot, he started in one of the toughest roles in the building, as a dishwasher. From the beginning, he approached the work with humility, curiosity, and hunger. He was eager to learn, willing to ask questions, and determined to understand more than the job directly in front of him. Over time, that curiosity and discipline helped him expand from dish to prep, then from prep onto the line, where he continues to learn, grow, and sharpen his craft.
What stands out most about Angel is his willingness to embrace challenges. He does not shy away from difficult situations. He leans into them. As the team began to see how coachable he was, how much pride he took in the work, and how dependable he was under pressure, he was placed into more uncomfortable situations that demanded growth. Those moments stretched him. They tested him. They forced him to trust himself more deeply. And each time, Angel came out stronger, more confident, and more prepared for the next opportunity.
His growth has been fueled by his own work ethic and by the chefs who invested in him at Your 3rd Spot, especially Chef Juan “Chino” Lopez. Under that guidance, Angel developed a deeper respect for the standards, discipline, and responsibility that define a great kitchen. He learned that excellence lives in the details. He learned to value every prep item, every process, and every plate that leaves the line. He learned that consistency behind the scenes is what allows guests to have an unforgettable experience out front.
Angel has become one of the most coachable, adaptable, and team-oriented people in the building. He studies constantly. He watches Ted Talks, reads articles, dives into books, and pushes himself to keep learning, even when nobody asks him to. He has invested an extraordinary amount of time into growing himself because he believes in what he is capable of becoming. That belief, paired with action, has changed his life.
One of Angel’s proudest contributions has been supporting off-site events over the past two years. Those experiences demanded teamwork, flexibility, and execution under pressure. They gave him another opportunity to grow and to prove that he could handle more. Inside the building, he has earned trust through consistency, steady effort, and a willingness to do whatever the team needs. He is the kind of person people respect because his actions make it easy to.
Outside of work, Angel enjoys soccer and running, and he has proudly supported FC Barcelona since 2005. One of his bucket list goals is to attend El Clásico in Barcelona at Camp Nou. Among his proudest personal accomplishments are completing three years of JROTC certification in high school and becoming the first of his mother’s children to graduate high school.
Angel’s journey is one of grit, growth, and belief. It is the story of someone who started with the hardest work, stayed open, kept learning, and earned every step through consistency and heart. He represents what is possible when someone is willing to embrace discomfort, trust the process, and keep showing up. His story is already inspiring. And for Angel Blis Mendez, this is still only the beginning.
